How to sow tarragon

March-April in a seed tray or April-June outdoors in a bed; once

transplant and thin.

Use: fresh or dried with fish,

poultry, soup and pickles; try fish with lots of it

grilled tarragon in foil.

Tarragon as a herb

The subtly herbal taste of tarragon also contains a slight bitter note and is slightly reminiscent of anise. French and German tarragon have a much more intense, sweet and spicy taste than bitter Russian or Siberian tarragon. The name tarragon comes from the Greek word for snake or dragon - one of the names for tarragon is "snake grass". The origin of that name is the old belief that tarragon can protect against these dangerous creatures. The twisted, spiraling root of the tarragon plant has also historically been associated with dragons.

Just like the popular mustard and béarnaise sauce, tarragon with its bitter taste is an excellent addition to meat dishes and soups.
